Hi everyone,
I just opened a coffee shop on Eastlake Ave. in Seattle. My business is primarily a boutique for local apparel designers, but there seems to be more of a demand for good coffee in the neighborhood so i decided to do the coffee thing too. I had no idea what i was getting into but now i am immersed in the high art of espresso with no way out in sight. I decided that if i'm going to do it, i need to do it right. So i am serving Espresso Vivace from a beautifully refurbished La Marzocco, with Organic milk, and as soon as i get a handle on the coffee and the business i will be experimenting with some signature Latte art. I've been a barista before, but not like this. The guy i bought the machine from taught me a lot in just two days, and the rest i'm learning from David Schomer and from my own daily experience.
